FIRST THE LAND

THEN THE FIRE, THE FLAVOURS AND WHAT BRINGS US TOGETHER

KM.Ø  Casa de viajeros

KMØ is where it all began. Before becoming a restaurant or a place to stop by, it was our home — where we imagined what would come next, where many things took shape around a table, a coffee, or a crackling fire.

Over time, the place has evolved without losing its spirit. Today, KMØ has become the finca’s kitchen and gathering place: a warm and lively space where people come as much to enjoy good food as to share a moment.
An open kitchen, a few carefully chosen bottles, a living room around the fireplace for cooler evenings, games that appear between two drinks, and tables that naturally fill up as conversations and encounters unfold.

It is also where we often end up staying a little longer than planned: watching the valley change colour from the terrace, sharing a story, or simply enjoying a coffee prepared just the way you like it, at any time of the day.

OTRO CAFECITO

Here, coffee is never drunk in a hurry.
In Colombia, the cafecito is a daily ritual — an excuse to pause for a few minutes, reconnect, talk a little longer than expected, and sometimes try to solve the world’s problems over another cup.

At the finca, our coffee plantation is still young and we move forward with curiosity: we are currently experimenting with seven different varieties, each with its own character, rhythm and surprises.
The journey begins among the coffee trees and continues through each harvest. And then comes the most important moment: when we sit down, choose our favourite brewing method, and simply take the time to savour.
After all, here, there is always a good reason for another cafecito.

THE CHAGRA GARDENS

A 10-minute walk from KM.Ø along a trail following the ridge, we decided to start a small adventure: a 400 m² experimental garden designed to operate as independently as possible.

Here, rainwater is collected and redistributed through an overhead irrigation system inspired by Gardens by the Bay in Singapore.

Today, around fifty varieties grow here: vegetables, berries, fruit trees and edible flowers. The idea is simple: for part of what reaches the KMØ tables to begin its journey a few hundred metres higher, in this special garden of its own.

A STORY OF INFUSIONS

Among the garden beds, a whole world of aromatic and medicinal plants also grows. Mints, verbena, lemongrass, basil, jasmine, thyme, rosemary, flowers and local herbs share this space and evolve with the rhythm of the seasons.

Here, the idea is not only to grow, but also to discover, smell, taste and experiment. Travelers are invited to wander through the garden, pick what the season has to offer, and create their own blend.

The rest is quite simple: a little hot water, a few minutes of patience… and an infusion that will probably be unlike any other.

THE HARVEST

It all begins up there, at La Chagra, following the rhythm of what is ready that day. Because in the garden, there is no fixed menu: there are seasons, surprises, and sometimes a few tomatoes that decide to arrive sooner than expected.

Accompanied by a member of our team, you set out to pick vegetables, aromatic herbs, fruit or edible flowers, simply following what the garden has to offer that day.

Then the harvest makes its way back down to the kitchen, where things naturally continue around a shared moment with the Chef. A few gestures, a few ideas, a little improvisation, and ingredients picked just minutes before: the rest comes together quite naturally around the table.
